Number Shot Restaurant Daimyo, Fukuoka, 2017

福岡大名の新しい業態の居酒屋Number Shotをデザインさせていただきました。福岡の屋台や食文化を世界に広めるというコンセプトで、店内に巨大な屋台のような、カウンターを挿入したレストランです。カウンター内と手前の客席、奥の客席と床のレベルを注意深く変えることで厨房機器とカウンターの高さを完全にフラットに揃え、4周解放のカウンターでこれまでにないオープンな店舗を目指しました。炉端やガスレンジ等の熱源を店舗エントランス付近にまとめ、同時にエントランスを低い天井とすることで、換気フードやダクト等を天井内に収めて開放感を生み出しています。同時に低いエントランスが茶室の躙り口のような入店時の高揚感を生む、路面店であることのメリットを活かしたデザインとしています。壁と天井は木毛セメント板を使用し、ラフで素材の質感をそのまま生かすような空間を実現しています。

This is a new type of Izakaya restaurant at Fukuoka, Japan designed by Mosaic Design. Fukuoka is a southern part of Japan and is famous for “Yatai” (street hawkers) which serving food and drink to the guest in the counter table on the street. The giant “Yatai” is inserted into the center of this restaurant as both main kitchen and dining tables to represent Fukuoka’s culture. Kitchen top and counter top are designed totally flat controlling floor level and distance between them carefully. The entrance has low ceiling to create a sense of Nijiri-Guchi which is traditional small entrance for Japanese tea house and also to hide range food and exhaust duct inside the ceiling. And at the center of the restaurant, the ceiling is going to be higher using blurred stainless steel plate to reflect the lively activities inside the kitchen as a “Yatai”.
